Do y'all know how the sensor these works?
I was thinking of getting one and was wondering if it was simply something that replaced one of the drain plugs or if you actually had to tap something

You'll have to tap somewhere. The easiest would be the pan, but keep in mind your temps would be after the cooler. Mine worked perfect in the stock sending unit location, but then again I'm running EMS so I didn't have to be concerned with the ECU.

how about some how fit a t-fitting after the tranny cooler? if you drill into the pan, it might leak down the road. i am sure any type of oil temp. sensor will work but just have to get the right size of fittings for the sensor.

Yeah, I thought about that later.
Maybe take a pipe the right size and then weld a bolt onto it and just use that.

yea man, whatever works. just dont drill into the pan. just my opinion.
